In the Hammond world that is known as a palm smear. The leslie speed on the organ is also set to tremolo (fast speed). See the video below for the technique at 1:36 mark of the video.
Start lower on the keybed say two octaves below middle C, do the same thing but do it SLOWER, say 1/2 the speed in which he is doing it. So with your palm you are holding down maybe 4 white keys at a time and then slowly start to move your palm up the keyboard. With the leslie effect on fast you will replicate that sound.
